Tire fitment on stock 17" wheels...
I own an '06 SS Sedan with stock 17" wheels and 205/50 tires. I believe the wheels are 7 inches wide. If this is correct; will 235/45's fit?

I can't directly answer your question if they will fit or not. I have 225/45's and they fit great. If you go to "tirerack dot com" and find tires that you like, there is a "SPECS" tab that will tell you what size rims a certain size tire will fit on.

I suppose it is dependent on what you get, but I got the BF Goodrich KDW 2's and they seem to be good. I haven't really tested them out as the temp was kind of low for them to perform really well. They seem to have a much stiffer sidewall than the stockers which is good for minimizing lateral deflection. I'm satisfied with them.
In general if you have more contact patch due to a larger/wider tire, you'll get more grip on sheer physics. If the tire isn't rated for the wet then you could be in for a rude awakening as far as wet traction and handling.
