i have 3 215/45/18 the stock tires on my car...

could i put 1 225/40/18 on and still keep the other 3

Yes, but only if you keep the new tire on the rear otherwise it will steer a little funny.

... not a good idea to use 1 differently sized tire.
If you want to change to a different tire size, get two changed (both back, or both front). Other wise you will run into stability issues.
