Just changed my plugs today, and noticed oil on either the #2 or #3 plug, depending on which way you're counting. I *don't* have the STi exhaust mod...so how difficult would it be to actually change this gasket? Or should I take the plugs to the dealer and have them do it? This would fall under powertrain warranty, yes?

with an inline engine, you start at the front of the engine, and count straight back.

on a V engine, generally, the #1 is the most forward on the crank, so, in the case of a GM small block, the first cylinder is the the one on the drivers side, so the left bank is 1-3-5-7
and the passenger side is 2-4-6-8.

the notable exceptions are the classic ford flathead and the old big block pontics/olds which are labled the same as the small chev, but the #1 is actually the 2nd cylinder back.

and, i'd make a warranty claim, yes.

Front of the engine being on the pasenge side, where the belt is? If so, then plug 2 is the oily one. Guess I'll give them a call on Tuesday...

Another question - other than oil getting on the plug, are there any symptoms I would notice in day to day driving that would point to that? Hesitation, misfire, etc?

the front of the engine is the side that is not the flywheel side, so yes, the one with the belts.
