Mine did that, I was able to monitor my engine data with Torque for Android. It would still read the temp but it never went higher than 70*C even after an hour of driving. Took it in and they found the Thermostat seal was torn and would leak. Probably an issue from the factory and just took 2 years to finally get bad enough to cause problems. Got it replaced under warranty.

Also the check engine light will come on after 2-3 days of this problem occuring.

Coolant temperature sensor. Make sure it's plugged in. Wouldn't be the first time I have seen it

The thermostat isn't electric. If its open, than coolant will simply flow and not allow it to get to full temperature. It's still going to get a temperature reading and not the three hash marks like a bad temp sensor does

if the first guy had posted what the CEL came on for it would make more sense.

The CEL comes on for Coolant temp not reaching operating temp. this is cause by the T-Stat being stuck open, they are designed to fail that way. if you plug ina decent OBDII scanner it will tell you the actuall temp. my guess is the reading goes --- so that you are concerned and get the car looked at. most people would probably ignore a cooler than normal reading.

check your stored or pending codes if you can. see if that code comes up. either way i would sugest you change your t-Stat and do a coolant flush while you're at it.
