NOS is a company. NOS (the company) stands for Nitrous Oxide Systems.
Nitrous is what you are spraying, not NOS.

The higher shot of nitrous you get, the more pre-cautions you should have.
If you ever hear of people blowing their motors it's because of:
1. Running lean from just using a dry kit and too high of a shot
2. Not upgrading a part of the fuel system when using a certain shot of nitrous
3. Not retarding timing when reaching a high enough shot
4. Using too high of a shot in general for the motor (usually 100+ jet shots)
5. Not using a higher octane
Pretty much all 5 will lead to detonation. If you avoid those 5 things, you should be able to run nitrous perfectly fine.

I plan on it, and there are only a few things you need to run it safely
1. Wet nitrous kit
2. Step or 2 colder plugs
3. WOT or TPS switch
4. RPM Window Switch
5. 91 or 93 octane
6. 75 shot max
And to get the most out of your nitrous
1. Bottle Warmer
2. Purge
You are taking no more of a risk than turbo or supercharging your car...it all comes down to the user in the end.

NJ's dead on, and those reasons are almost always in turn related to user error or lack/misinformation of use of a kit. That, in turn, is part of why the kits have a bad reputation among those who lack the knowledge. People who "don't trust it" generally don't know much about it to begin with.
That and it's the cheapest form of forced induction, so it's more readily attainable to people, which means more potential for ignorant users to mess something up. I got a phone call from someone at a local track here who watched a kid blow his car up in the staging lanes with his Zex kit because of improper install and use. I'm kinda glad he didn't get to run it, at least it died when not moving.
Ninja where'd you get that list, some of it looks familiar

I have been running a 75 wet, with a step colder plug for almost 8 months now, no problems and excellent track times, started off with a 30 shotm then 55 then 75, as high as i will go for now, yes once i hit the 55 shot it was bye bye clutch, so i replaced it with the stage 2...now i run the 75 with no problems and the clutch and drag radials do the trick, now I am going to order the stage 1 and 2 and then go back down to the 35 shot and start over, just my 2 cents

I have been around Zex and NX systems for quite some time now. Had a zex system myself on a 99 mustang gt and a friend of my is a dealer/installer for the nx systems. Both system are excellent. My buddy is actually finishing up his 2 stage 125 shot direct port system on his SRT-4. He ran a 75 shot fogger system last year for the entire track season with no problems at all. Then we will be putting in my Zex single stage 100 shot direct port system in my SRT-4. These systems are both safe as long as you follow the basic rules and use common sense. I would like to add 1 more safety rule.
6. Don't spray below 3000 rpm's (detination for sure with a super or turbo car)
