question, my brain could be completely shut down and i could look like a huge ******* with this question, but...
would the thin air in the mountains be one of the reasons for the larger than average race wing?

The huge wing is used in conjuction with the front splitters/spoilers to create downforce usually in a 40/60 ratio from the front to back of the vehicle. The gravatational force put on the vehicle is different on a mountainous course; so a huge amount of downforce is needed to keep the car stable. The Suzuki Escudo also has a massive wing.
