Is Chevrolet trying to rip me off?
MIL appeared, and upon doing extensive research I'm confident I found the cause of the problem. It has to do with a GM Service Bulletin for faulty wiring underneath the hood for the MAF sensor.
The cost including GST is $192.58, that seems outrageous for what SHOULD be one hour of work total, I'd do it myself but I don't have a factory service manual handily available to know where and how to trace the wires. For the cost they're quoting, I feel like I could pay for the factory service manual, which is what I'm trying to avoid needing to do by reaching out to the dealership.

Ditto. Mechanic work is not cheap. You will spend that much finding a manual and the part, plus your time. It may not fix it and then that is on them to make it right. Plus like stated above warranty.
I posted a link to a service manual with wiring diagrams in your other thread. So no need to worry about using the dealer now. 
But I agree with the sentiment of the others... that's totally not an unreasonable price for the work involved. I'm sure they're just using the given flat rate for the job though, and those aren't always accurate.
When I had GM Stage 2 installed in 2006, I gave them a set of spark plugs and figured they could throw them in while they're in there... maybe 0.2 to 0.3 hour charged. Nah. That's not how they work. Flat rate for the spark plugs is/was an hour...allegedly. I bet I could teach a 10 year old to change Cobalt spark plugs in less than half an hour.
BUT that's what I was charged, because that's what the "book" calls for - that's how dealerships tend to operate. Lesson learned.

This was the first time I've ever reached out to a dealership for their services, so sorry if I sounded unreasonable or chintzy to anyone reading it. I believe you guys. Thank you for letting me know. Whew, damn it Chevy haha!
