Stalling

Ive searched the fourms for this problem maybe i fail and didnt put in somthing relevent to this problem. So maybe you guys can help pin point this problem.

After cold starts in the moring when i go to work i let my car warm up and such. By the time i get half way to work (its not too far from my home) my cars coolant temps are at about 160-167. I always slow down by down shifting and rev matching(nothing aggressive just rev matchs to 4,000 RPM-3,000RPM) and slow down at the stop light. Sometimes i would give my car a little gass to creep up at the light like everyone dose. When i do this
somtimes my car creeps up and when i stop and lett off the throttle, the idle will bogg down to litteraly 400 RPM all the way too 200RPM. and come back up too 700-750 like normal then do this all over again and finnaly stop somtimes. Other times it has done this and completely stalled. It has neever givin me a check engine light the times it has done this. idk why its doing this, on a side note the car dose not do this when it has been running all day. any input on this?..here are my mods if it helps

Injen Cold Air Intake(K&N Filter). GM Stage II. Magnaflow Cat Back Exhaust System.
Breather on Valve Cover bung, Breather on intake bung. (just wanted to see what it would do lol.)

IAC sensor I'm guessing, I get the same thing on my 2.2 and it comes and goes so I never really get to figure out what it is before it's gone.
