Go with 18x9's with +40 for 255/35's. That's what I plan on running soon. +35 will rub in the back for sure. Worst case, if +40 causes any issues on the inner fender wells or with the struts, you can throw on a set of 3mm or 5mm spacers. It's harder to go the other way if you get +35's and they cause problems.

Bottom line, the front and rear have very different and specific needs.
Rear: if you never want to rub your gonna need a +45 with a fender roll possibly a slight pull depending on the specific tire brands width.
Front: Camber comes into play here, you seem to not be a racer so I'll assume your only gonna run about 1* so somewhere in the +25 to +30 range is where you want to be for the look you want without touching the fenders.
+30 is the best compromise if you dont want to mess with spacers, different offsets are gonna run less than 1.8* camber. I rubbed a few times but only with a good amount of weight in the car on large dips in the road due to the rears poking just a little bit.

That being said if I were in your shoes at your power level with your baller budget I'd run a 245/45-18 rear 9" wheel +45 with a 275/35-18 front on a 10" wheel +30 offset with some custom forgestars. Pretty damn sure it would clear with camber plates and fender liner mods and a little tap on that seam in there.

I'm also thinking that not to risk to buy tires that may not fit, after I buy the rims, I may try to look for a set of 255/35 at a junkyarrd to make sure they don't rub

So some people are telling me that 18x8.5 with +35 offset should be flush with the fenders. But If I have a 15mm spacers on the stockers, and it looks like they will need 20mm spacers to be flush, how is that possible? Are you guys sure that with 18x8.5 +35 they will be flush without spacers?

You DON'T want a +50 offset at any width. My 19x8.5's with +38 are 1/2" from hitting the front struts. 8.5's with +50 would most likely rub and not be anywhere close to flush.
