im looking at getting new tires. Really Confused

Hey guys, im looking at getting new rubber on my car today. I am planning on driving up to tirerack and having them put them on. I have some questions as to which ones will do their best for my type of driving and price. I just purchased my car about 3months ago and the previous owner had the stock pirellies on there. They are just about to go bald so time to go shopping. Now first off I will be driving in the winter so I am really considering all season tires. One thing though is that I would like to go to 225/40/18 for the new tires vs the stock size. Is that ok to do with all season tires? Is there and rub with this size? Also, I am concerned about the sidewall size. I always thought that all season tires had a huge azz sidewall. I love the look of the low profile tires hence the reason to go to 225/40/18. I would appreciate all the help you guys can give me. And yes I have considered getting winter tires and steeliees but I have no where to store them so that is totally out of the question. Thanks in advance, mike
