I'd bet that the safety features still work even if you cancel your subscription.

The only "safety" feature that will work is being able to call 911. It wont automatically contact ONSTAR if your airbag goes off, it wont do any of the other things its advertised to. The only reason you can still use it to call 911 is due to legal requirements of all cell phone networks to allow emergency calls even if a phone is deactivated.
