Seat protection?
The UltraLux (which is probably GM's marketing name for Alcantara) is a synthetic cloth so you probably wouldn't want to use any type of leather or suede leather protectant or care products. The mesh is also synthetic as well as the leatherette-type trim material down the side of the seat and on the upper back half and rear of the head rest (which is a fancy name for vinyl).
I remember a couple months ago in another thread we were talking about cleaning and care and someone mentioned they use 3M's Scotchgard on the whole seats without a problem. I start with cleaning them really well (vacuum with a soft bristle brush attachment) and then wiping the seat down with a damp terry towel. After it is dry spray on the protectant as directed. I'd still do a small corner or portion first just to make sure but it should work fine.
Also one other thing I've found helpful in keeping the seats clean is to carry a microfiber towel in the car. They work really well on the inserts at pulling up dirt and dust. The towels are also a great way to keep the dash and door panels clean since they seem to attract a lot of dust.

I Scotchguarded the whole car...the auto stuff on the seats and the carpet stuff on the carpet...works great! I haven't spilled anything on them, but it did nothing to harm the seats...you should be fine....
