the computer will add more fuel and run open loop cuz thinks engine isnt at op. temp

No No No, closed loop is achieve as soon as the 02 sensor is hot enough, it happens WAY before the coolant temp achieve 180 farenheit degrees.

Interesting.... On mercedes it doesnt enter closed loop until engine reaches operating temp.

A lower thermostat will only cause problems. Say you put in a 160 deg. stat. The PCM will set a DTC P0128; engine not reaching thermostat regulated temp. This will shut down A/C, turn on coolant fans on high, SES light will illuminate and possibly go into "Loss of Power mode". So, not a good idea.
