Distilled or not water + water wetter for the intercooler?

If you are running a 50/50 mix of coolant + water I thought it didn't matter if it's distilled or not, only use distilled if you are running 100% water, right?

Always use distilled.

I have to wonder, some of you guys are in places where it gets pretty cold... how are you running pure distilled water with water wetter in these climates without freezing issues?

You can only run water in the IC during the warm months. If you have the car out in the winter you have to switch to a water + antifreeze mix.
