high coolant temperatures

I haven't checked yet to see if my coolant pump is working since this began but im pretty sure its fine but.. The last two days ive been driving around normally and while waiting for some friends to go into a store and come out ive watched my coolant temps go up all the way to 219* when normally my car stays at a constant 187*. As soon as i start driving though the temp drops back down into the 180's. I have never seen this happen before with my car so what do you guys think is going on?? Is anything even wrong?? Summer has nothing to do with it either since it has been like 70* out while this is happening. What do you guys think?

you're not on a GM tune, the GM tune has the fans kick on at 220 or so, or if you get an aftermarket tune you can get them to kick on sooner. Mine kick in at 192.
