To answer your other question, my iat2s are around 155*-160* after a pull, and that was after plenty of daily driving/crusing for over a half hour lol so thats pretty accurate for the average pull for me in the hotter part of the day here
Sounds like you need to run more meth. Devilsown says If you're over 150* to put in a bigger nozzle.

iat2s are post intercooler intake temps im pretty sure is the "technical" definition of it, wideband displays your air to fuel ratio, to read your iat2s you need an aeroforce interceptor scan gauge

heatsoak basically makes everything run hotter, it will rob you of power and can cause your car to start pulling timing to protect your engine, but either way, when your iat2s are high you dont want to keep doing pulls and/or beat on your car when your iat2s get hot, cooling mods help to prevent heatsoak and keep iat2s down so your not loosing power, it wont start pulling timing, and its much better for your motor when your temps/iat2s are cooler

i've never used it at the track (still need a good driver launch/shift mod), but doing a 2nd gear to 80 on the free way WOT puts me at about 130..still around crusing temps.

I might get meth one day..but right now..not really beneficial to me as its not a track car but a DD. Still want a header/downpipe and wideband+ custom tune before I even think of going meth anyway.

But yeah..its a pretty clear consensus that our cars loves meth

With the mods & cooling mods in my sig my IAT2's go no higher than 20*F above ambient while cruising (on a hot day), and no higher than 135*F (on a hot day) during a long pull. Your temps will vary from mine due to location, elevation, mods etc, so only use my numbers as an idea of what to expect.

I highly suggest at least a heat exchanger for your current mods. OTTP is coming out with a gen 5 heat exchanger which is made by Griffin (the same company that made the h.e. for the time attack cobalt & our stock h.e.), and will be the best one on the market. It will be a direct replacement for the stock heat exchanger, and there will be no need for a front mount heat exchanger.

If you dont want to spend the big bucks. Look into OTTP's gen 4 heat exchanger, or ZZP's S3 heat exchanger. Also, it will be a good idea to pick up a dual pass endplate, and an Opt. B kit.
