'Timing' what is it?
there are a few timing points in engines now adays but the most common that is being refered to is ignition timing. when the pistion is at the top dead center (TDC) the spark will fire and this is the timing of the ignition. there is a lot more to it but i dont want to get toooo technical bc this can easily turn into a "i know more about cars than you thread" so i will leave it at this.

Ignition timing is what they are referring to. However, Cam shaft timing is also adjustable.
IT is also when the camshafts push in the valves in relationship to the piston/crankshaft. The two shafts have to be coordinated so that the valves are opening at the precise moment they are meant to, this is done by tying them togethor using a timming belt (on DOHC). There is also the ignition timming, which as said times the spark plug with the valves and etc to fire the spark at the right moment so that it acheives better combustion.
