weird problem.....

OKay so sometimes when I am going in reverse and i ride the clutch even the tiniest bit (which I have trouble with in reverse) I will let it out to engagement hit the gas and push in pretty quickly , then when the needle goes down sometimes it hits 500 and goes back to 1000 then 500 then 800 where it should be.... it does it worse with the AC on .....

WTF????

the other thing is when I cruise with the AC on and shift , the clutch pedal has more friction , if that makes sense , there is more pressure in the pedal....usually when the AC is on.....

just wondering if I am being too paranoid or if this is something I should look into further.

I do know that your clutch fluid is housed in your brake master cylinder which is vacume opperated and the ac pump takes a draw off of the vacume circuit when you have it on. So I see where that could happen. I wouldn't be to perinoid... Oh the clutch master cylinder is powered by the brake fluid and thats how it all ties togather if that makes any sense?

Everything you just described is absolutely normal. You don't have anything to worry about. My car stumbles and jumps around a bit if I do what you did in reverse and it acts the same way with the a/c on.
