yup, my tuner told me that the power enrichment doesnt come in until like second gear (for auto at least) so cant wait to get it tuned!

have you taken it for a good high way run yet. alot of people say thats really good for the motor. just don't stay at the same speed for a long period of time as that can hurt the potential of the motor.
In my experience with GM, including my SS/SC and my dad's Sierra 4.8, it takes around 4-5K miles for GM engines to loosen up and provide full power. From speaking with one high-performance mechanic I used to work with said that cars he dealt with usually reflected that same figure on the dyno, a stock baseline done when brand new will be less than the same cars output later on.
