if he removed the sunroof assy. i wonder if it reduces the structural integrity of the roof. Before attempting, id would personally look at what a non sunroof roof assy. looks like. I know on Chrysler products, the sunroof assy. crossrails replace the stock ones.
weight saved vs time/money/effort spent. is not worth it. the real way to do it would be to get Crawford Composites 100% cf roof. or swap roofs with a non sunroof car.
i don't see a problem in doing what this guy did. however once you get to installation and making sure everything is sealed and fitting right. you are going to get stressed, frustrated...and give up. except instead of just being able to give up you'll have to reinstall everything, hopefully you don't break anything in the uninstallation process
because the Carbon Fiber, while strong, is thin and would be prone to tearing, you would have to graft the metal frame of the glass for it to stay on. Its the same reason you are suppose to use hood pins when you install a Carbon Fiber hood, the bolt holes for the latch will just rip.
