For proper HDR u need at least 3 photos at 3 different exposures. One properly exposed one underexposed and one overexposed. The more photos at different exposures the better
With 3 exposures you get to pick parts from all aspects... the colors from the Sky from the dark picture.. the brightness of the car in another picture.. the perfect colors from the ground and background.. Here's on of my examples using 3 exposures. I usually like to take 5 or 6 just for more options.
