Ya that sounds like a good way to learn if the pace car is a modded EVO I'd rather do that than drag race

practice, practice, practice! a good driver with a shitty car will almost always beat a shitty driver with a good car. Its test and tune right? so dont worry about beating the person on the other line. Let alone leaving when the light turns green. Practice finding what rpm's your car likes to be launched at. Practice at feathering the clutch instead of just dumping it. And as always. HAVE FUN!

What's the best way to figure out when to shift, I have a stock LSJ but driving around with my friends (srt4/evo) their cars are faster but they are decent drivers too. I can't find the best rpm/speed to shift at. First-round I'm fine, we usually do rolls anyway, but i think I stay in each gear too long. Car doesn't pull as hard when I shift early.

Drive the car, You can feel when it is running out of air. That is where you need to shift.
