Airbag Sensor

I'm working on putting some new racing seats in my car however to do so that involves unplugging the airbag sensor underneath the seat. Does anyone know of a way to disable the sensor completely or if it is possible to do so? Whenever I turn my car on with it unplugged it says on the screen in the dashboard (by the speedometer, gas gauge, ect.) to "service airbag". I drive a Chevy Colat LT 2007.
