So my Brembos started squeaking loud when I come to a slow stop (pressure barely being applied to the brakes). Car has 3150 miles on it and they have never done this before until last week. So I take my car to the dealership and they say that nothing is wrong with my brakes and they even printed off this piece of paper from GM stating that my brakes and high performance and are expected to make some noise. They are not going to do anything about it and it is really starting to get annoying. I can hear them squeak even with my windows up and heater blowing. Has anyone else had problems with squeaky breaks and dealers saying it's normal?

Yeah that can be normal, I heard a squeak at low speed when coming to a stop in the first few thousand miles. It will lessen and may go away over time. Check your rear rotors on the inside, by sticking your hand through the wheel and feeling the surface, you may have a large groove in them. Happens to a lot of cars and the dealer will turn them under warranty.

Mine only does it when its cold/cooler out side. If this is your first winter with the car then this is why it is the first time you are hearing it.

You will notice it, that is for sure.
Sometimes you will even notice your rear brakes doing the same. And like you said, only when you have barely any pressure applied.
Myself (09 SS/TC) and a guy I work with (08 SS/TC) are employed by a GM Dealership and sadly, the dealership you went to is not telling fables. There are no fixes for it (as of yet, and doubt there will be)

Its normal for high performance brakes when they are cold. If you are annoyed by the sound then get some less aggressive pads. You will lose some brake performance but the noise will go away.
Some people on here have recommended Hawk pads and they claim theirs make less noise.

Yup perfectly normal with the Ferodo pads (I beleive these are the stock pads for our cars) to squeak if you want them to stop either run a lower quality pad or make your stops later and harder lol
I have Hawk HPS' on the back so the backs squeak when it's cool/cold now too
