It will be fine throughout the winter. My friend got a 2013 STI last year. and he plasti dipped the wheels immediately to keep them safe from salt/sand and its been a year this past week and they still look mint. I just used the product for the first time on my wifes winter wheels with Pink. came out good, so far been through three snow storms and holding up good.

For hers we used 6 coats of base ( white ) 5-6 coats of color ( pink ) and 4 coats of gloss.

That sounds like too much work. How long do you wait between coats?

As far as plastidip technique, mine's a tad different than what 07Metallic used on his girl's wheels.

For black I've found for best results do 4-5 coats of all the same color. Usually 4 will about do it, but sometimes a 5th might be needed.

1st coat - basically a light dusting over the side of the wheel you're working on.
2nd coat - a slightly heavier coating, but still not very heavy. Just to further fill in the barren areas.
3rd/4th coat - (this is where is takes some practice to get just right) on this pass I give things a pretty heavy coat. With plastidip there is a very very fine line from going between a textured sort of rough finish, to a very smooth finished looking coat, to a dripping way too fat coat. Basically as your laying the coat I do the lip of the wheels and insides of the spokes first, then go over the meat of things last. What I look for it where the plastidip basically starts to gloss over and small bubbles appear in the finish. When you start seeing the bubbles you need to be VERY carful to add just slightly enough more to where gravity can take over and lay down the bubbles, otherwise you will go too heavy and you'll get drips. This is how my wheels looked on my 3rd and 4th coats. Can you see how they appear to have a gloss coat on them when they're wet?

That's really it ultimately. No glossifier, no nothing. Just straight up matte black. It's like any good painting technique really, it takes a little trial an error to nail. Some might use a different technique but I've personally gotten the best results this way. As far as durability, I've had no issues and it's held up great on my other wheels that I ran over the spring/summer/fall. It's obviously not going to be a strong as something like powder but as long as you don't curb the snot out of your wheels you should be fine.

well i went to town fair tire the other day to get my new tires put on....and well they said they wouldnt do it because i didnt buy the tires from THEIR store. Even though i had the reciept from ordering them online. Last time i buy tires from them.
