sorry to hear and glad your ok. Honestly when you get your new car go to an empty parking lot (with no light poles) with some stuffed animals. Set them up randomly and start driving. close your eyes for a second or two and steer a little to the right or left and open your eyes. With some luck there will be one right there for you to attempt to miss.
Now I would start at like 10-15 and work up to about 30. If it's a huge parking lot I suppose you could go up to about 45. It'll help your reactions, I promise. You'll learn to control your car and not overcorrect.
This could also work with having a friend in your car and just be having a regular conversation but have him yell "SWERVE!" at random times.

I wonder how close you were to hitting the person. Would have sucked worse then loosing a car to hit someone that's for sure. I don't know what I'd do in that situation...slam the breaks and hope to gawd they got outta the way I guess.
