Hello,
Okay I put the economy brakes on about 10k-15k ago. I checked them at the end of summer and my one side was wearing unevenly I didn't really have the money to buy new brakes and there was a good amount of brake there anyway. Last week I started getting a grinding noise on the drivers side so I got new brakes and new brackets that the brakes slide into (I figured that was why they were wearing unevenly). When I took my old brakes off. The drivers side outside pad was just about gone and the piston side had close to half a pad on it. And my passenger side had a little more than the other side piston side pad. I was thinking maybe my proportioning valve was bad.

What you are generally experiencing is from the sliders or pins not being lubed and are siezed or sticking so only one side has pressure applied.
Most people even some mechanics donot lube these pins,also contact point could be lubed.
Another thing ive seen is the pad actually hanging up where it contacts the caliper(on the outsides) and doesnt move in As it wears.this area could be lubed as well.

NO. NEVER use any "regular" grease anywhere near your brakes. Common sense should tell you thats a bad idea. Not only can it cause brake failure, but it also deteriorates the rubber components on the brake system.
You need a product that is specifically for brake lubrication. Permatex makes a product that you can buy at most auto parts stores. They have a regular version and a high temp ceramic version as well.
