someone please tell me whats wrong with my car
since i have had the car the coolant has never been over 185 degrees
now today sitting at the store it shot up to like 219 degrees what is the problem?

Its normal. If it was sitting there and the AC was on then its normal. Your not moving so air wasnt moving thru the grill. But 219 is normal in the summer.
Next time the cars temp goes that high check to see that the fans are running.
The ECM commands Low Speed Fans ON under the following conditions:
• Engine coolant temperature (ECT) exceeds approximately 106°C (223°F).
The ECM commands High Speed Fans ON under the following conditions:
• ECT reaches 110°C (230°F).
If so everything is fine

Perfectly normal. The cooling fans usually won't kick on until you hit about 225 degrees, unless you are in good with the dealership and the program your cooling fan to kick on at 200 by using the Tech 2 scan tool.
Hate to ressurect an old thread, but still can't post new threads... (prolly the email thing)... ANYWAY I'm running out of theories on how to fix a coolant issue.
I'm losing coolant like crazy... I refill the reservoir every 2-3 days (Yes 50/50 dex cool, no.. I don't mix with the green stuff).... The engine coolant is fine around 180 or so, and I've not found a puddle yet. I've had the system pressurized, no leaks. I've had it visually checked running and cold. No smell or smoke from the exhaust, no signs of cracks in the reservoir. One dealership tried 3 hours to figure out, I talked to the mechanic at another, also no idea/
Leaving me with (slightly possible) options-
A) Head gasket leak into cylnder (I guess I could do a leakdown or compression test)
B) BAY temp evaporating coolant, from driving aggressively
any ideas or experiences?

There is no way you can loose coolant without it going somewhere !
Next time it is low bring it back to the dealer and let them fill it and have them document it in your file to keep it on record with GM.
This is a serious problem and I would make sure that GM is aware of this and protect your ass .
The Possible scenario would be the head gasket is leaking into the cylinder at a certain temp and not all the time (but you would see white smoke from the tail pipe if this was the case.
2)Oil floats on top of the coolant so watch your oil level on the dip stick if its rising in the morning its a big problem.(the coolant can be evaporated from the oil while driving from the engine heat)Do a oil change and pour it in a clear bottle and let it sit a day and see if it seperates.
3) If you dont have a seperate tranny cooler and the rad gets a crack between it and the cooler ,coolant can get in the tranny(notice any hard shifting)
4) check under your floor mats for dampness.(windsheild getting a film on it all the time)

Your engine temp will actually stay cooler with the AC on b/c it turns on the fans.
Go for a drive with the AC off sometime... get the temp up to 200 or so... then hit the AC and watch the temp drop.
It's a great trick while waiting to stage at the track.

But if not the fans default on if you loose the communication between the Bcm I think and the PCM.I have some info on it I will try and find it.I think the sensor goes to the BCM.
Temp sensor is either disconnected,broken or bad connection or the sensor itself is no good.It has no reading from the sensor to display.Take a look at the senor connection and wire.
Were you doing anything under the hood or somebody else.
