Low coolant light

I've checked my coolant god knows how many times now...and its completely full everytime. So why on earth does this low coolant sensor keep telling me I have low coolant when its cold outside?

Any ideas? Suggestions?

Either a bad sensor or you don't have a high enough concentration of coolant in the mix. Should be 50/50.
