Water pump or head gasket?

I have a 2009 SS turbo that seems to be running hotter then I like. It's 20f outside and the car runs between 200-215 when cruising highway or city but if I drop a gear or just sit and rev it to 3k rpm it will drop to the 180-185 range. I just put a new gm thermostat in and that did nothing. The water pump doesn't leak but could it be weak? Or is it a head gasket? It always blows hot air and never overheats it just runs hot. I've tried the hand job method to burp the air out multiple times with no change. If it could be air in the system what's the best way to get it out?

Pull the upper radiator hose and make sure it's filled with coolant.

It is when I pump it with my hands I can feel the fluid in it and watch it burp out into the overflow tank. It did have some air coming with it the first few times I did it but now it's all coolant no air when burped

Anything blocking the radiator? Fresh coolant/water?

Have you considered maybe it could be your engine temperature sensor going bad?

I thought about the coolant sensor but didn't know if they would be off in temps when going bad

Yup it could give the pcm incorrect readings but the temp is actually correct i would take a look at that
