2.8 and Plugs

I am running the stock plugs right now on stage II and everything is going fine. I see that most people have changed out their plugs. What is the advantage of doing that? Am I not seeing all of the fuel being combusted? Why do most threads recommend a .40 gap w/ 2.8 when the stock gap is .35 and pulleys below 2.7" should be .35? I'm assuming the swap is just a 20 minute hack job to replace them right?

I thought stock gap was .040?

edit: that is factory settings
