Zinc coated metal is galvanized metal. If it's just a zinc coating it'll wear off very quickly.
I don't know of any metal that's black except "black iron", but even that's really brown from the oxidation on it's surface.
I'd be interested in knowing what material is used if it truly does stay "black". Any metal that's smooth is shiny. It's difficult to make a smooth metal surface look "black" without a coating. And there is no coating I know of that would handle the rigors of brake pads.

I think Stoptech makes them...dont quote me on that tho. Some one on here gave me the info. Their site doesnt have them or at least i couldnt find them. There not solid black like those other one tho. These ones are Solid black on the inside part but the outside is more of a gun metal. I think they look sick and am trying get them also
Heres a pic but you cant see them too well

Glock firearms has been doing stuff "like" this for years. They ultra high pressure gas permeate metal with a substance called tenifer. Then they ultra high pressure stamp whatever's left on the surface down into the metal. It makes the barrel of the gun slightly below diamonds on the hardness scale, and it will never, ever wear off, rub off, or come out of the metal.
Granted their process is focused on strengthening a metal. But I'm sure the same concept could be applied to a coloring agent.
If you're buying a good brand, I don't think they would sell you some cheap ass painted rotors, bad rep ruins business.
