Coolant temp.

Ok so I've had my car since April of this year and I keep well maintained and changed the oil a couple tomes and got a transmission flush not too long ago also. But my question is, and I've looked on here about overheating and what people are usually running their coolant temps at but I've recently drove from Tampa to Daytona fl which is about 130 miles there and back and the car ran like a champ but before I left I was always sitting at 147-149 coolant temp on the dash readout. When I returned to Tampa the car is now reading 178-200 all the time since I've been back. Should I be worried about this because it jumped to such a high number so quick or is this normal and this is what I should running at instead of 149? Any help would be appreciated, and any ways to fix or experience of this happening would help a lot. Thanks guys!

147 is too low. 178-200 is typical.

Original temp is too low. Might be stuck thermostat.

2nd temp is normal. Thermostat probably is operating normal now.

Ok and what could have been the problem to have the coolant temp so low? Should I replace the thermostat or just leave it and keep an eye on it for awhile?

If the coolant level is and remains full, and the running temperature is normal I wouldn't mess with it. Continue to monitor it and keep an eye on coolant level.

Ok yea that's what I plan on doing, I just thought it was weird that it just all of a sudden shot up like that lol. I put a little bit of coolant in my intercooler and in the coolant tank just to make sure that wasn't the problem
