No header "doesn't help at all" as far as I know, though some are significantly better than others.
Sounds like you have some reading to do. There are about a dozen stickies in this section.

i gave a girl a wet shot 50 times once and she......oh sorry wrong thread.
but no seriously. go with a 2.7, 60's, tune, cx racing heat exchanger, dual pass w/ option b, and the 50 shot. you'll be golden

As mentioned above, stock exhaust manifold is extremely restrictive. If you plan on going with smaller pulley sizes dont go with stage 3 because from what I've read (god knows don't go off of that though) the PCM is locked and cannot be tuned.
If you're planning on doing the stuff you're talking about don't mess with GM stage tunes. You'll spend more money and get less performance, only to soon have the desire for more in which case you'll surpass either of the stage kits capabilities. I'd concentrate on cooling and traction mods first so you can put the power to the ground and do it safely & without heatsoaking out the ass. When you start going for power mods make sure you have the stuff needed to monitor all the things necessary so you know how safe you're running or what kind of problems you're having.
Thanks alot guy..another thing i was just wondering with my setup is there any other little odds and ends that i would need to pick up for example spark plugs or anything like that..basically anything else i will need to run my setup save and smooth and also to bring my best numbers out
Thanks in advance
