ok i just got my H/u in the mail today
i got the pioneer p4000 and the cheap wiring harness cause i could care less about door chimes.
now if i understand this correctly, all you do is plug in the new harnes to where the stock radio was plugged in at, then the other end of harness, speakers and the pioneer wires all crimp together?

Yes, you plug the wire harness into the plug that was plugged into the stock radio and then you crimp all the wires from the new head unit's wiring harness into the wire harness you bought!
Turn on the car, make sure all speakers and radio work and then mount new radio into dash and done!

waht about the video bypass
Actually...your switched accessory +12v (RED wire) needs to be tapped into a switched fuse...wiper fuse should be OK.
The stock HU depends on the GMLAN system for the switched signal. The cheaper harness won't allow for that.
Solder for the best connection....crimping is ok, but do it well.

Actually that was a separate subject from the video bypass. I was talking about the basic wiring of your harness.
I'm not familiar with getting around the parking brake bypass stuff so I can't say much about it.

For the Video bypass you need to put a relay in line
Use the amp turn on wire.
You could use a 528T (pulse relay) but its a little more complicated than just using a simple 5 pin relay
It needs a pluse from the parking brake, The unit is looking for the parking brake to on, then off, then on again. The remote turn on wire has enough of a delay on it to achieve this.
After reading your posts I got to thinking this might be a little over your pay grade if you know what i mean.
Might want to take it to a shop and have it done right, it will be worth the money, just DON'T take it to Best Buy, go to a local shop.
