You need to decide if you want lower notes and deeper bass, or a tad bit punchier and faster response out of the bass. 12's will be lower but "warmer" (they'll kind of glaze over some of the more punchy notes) and 10's will usually have better responses but, depending on the subs, sometimes won't get as low or deep as 12's.
As for amps, it depends on what subs you want to go with so you power them right.

i have them but 2 10's. i love them, sound great, great price. my friend has them in 2 12's and they sound great also, but different. if you listen to mostly rap, r&b etc. i say go 12's. mostly rock type music go for 10's to hear the actual beats and whatnot better. kicker cvr's are very good though imo.
In the end its really personal preferance and the quality/build/type of box BUT a general rule is 10s will hit "tighter" and higher bass where 12s will hit lower and not quite as tight
