is it possible to tune the stg 3 pcm like could i have a street tune and a race tune for like meth or nitrous, the stg 3 pcm did have 2 tunes on it right one normal and a competative mode? im currently running a 2.8 and 60s. could the stg 3 pc be made to work with that setup?

As far as I know its not tunable... I haven't been around here for awhile so I'm not sure on what some of these companies are doing now.
It runs the basic stage 3 tune (much improved stage 2 tune - idle fix, less rich, no cat codes, etc.) with the added options of high octane (meth?) and nitrous.
It would not work properly in your situation.

The GM Stage 3 PCM can be tuned via Trifecta Performance.
I am currently running my GM Stage 3 PCM w/ air conditioning

Actually, I followed the direction of a few guys on here previously who have had meth working as a "trick" with the Stage 3 PCM. The octane is significantly higher due to the injection of the meth.
So, yes, I can confirm along with a few others, Stage 3 will work with meth in place of race gas.
I also had my A/C rigged up so I wasn't missing out on that either! I live in Texas, so its a necessity. Trifecta wasn't around back in my day. Well... they were, but they weren't doing those tunes yet!
