The only time I ever take mine out of Manual is when I can't set my lighting right.

The viewfinder should tell you +/- where you are with the light but yeah in the heat of the moment manual can sometimes cripple you.

Maybe I'm doing something wrong with it then because when I use that a lot of my pictures come out underexposed.

Are you basing the under exposure on the lcd or on your computer monitor? I would take a look at the histogram info on the image and see where all the image data is. Try to keep it all in the middle or evenly distributed. The right is too bright and the left is too dark.

Understanding Histograms

I would just try to keep the data from bunching up too far right or left.

I'll definitely have to check for that next time I'm shooting. To be honest I'm not sure if I've ever noticed it.

But if I'm understanding you right most of the data (the black) should be more towards the middle or even to the left or right?

In a good image all the data should be evenly distributed but if there is under or over exposure the data will start to hit either the left or right side of the box and start climbing. Think of it as weight distribution when driving to much to the right or left makes you lose traction so you need to balance it out without hitting that limit.

I love the first one, sadly mine from today were too grainy for my tastes.

thats the new Bow Tower they are building downtown. its like 58 stories tall and i guess the atrium windows open up allowing fresh air to circulate through the building.

Check out a program called Lightroom, I believe there's a way to reduce the noise in your pictures.

lightroom and photoshop are both capable of reducing "noise" in photographs
