Tighten whatever came loose. You may need to remove the headliner.

I have a 2007 SS/SC. I had the rattling roof also. I pulled back the weatherstripping around the door frame and the headliner. By the passenger and driver head area is a hard plastic egg carton thing that hits the sheet metal roof when driving. I had some foil covered bubble rap, and inserted it between the metal roof and the hard plastic egg carton ( some type of crash protection thing). I also inserted some bubble wrap at the rear area of the headliner because the area near the ceiling hooks was loose and rattling. To do this I unscrewed the rear bolts that hold the hanger hooks with a torx head.
