What catback should I get?
You can get 2.5" all the way back, or 3" with a 2.5" inlet for your 2.5" downpipe exit.
I have their 2.5" exhaust, catless, with a 18" resonator and a dynomax ultraflow muffler. I can post a video or 2 if you'd like.

Go with a full 2.5" catback if you want to replace your stock system. You are not going to be making enough power to warrent a 3" catback.
The stock catback has a restrictive 2 1/16" portion in the inlet of the resonator that people either dont know about, or seem to forget to mention (see photo below). A 2.5" catback will flow great for your setup (along with 90% of the SS/SC's on this site) while also maintaining excellent exhaust gas velocity.

Whatever you do please do not put a 2.5" downpipe on your car like one member mentioned. The stock downpipe (minus some of the restrictions) is mainly 2.785" o.d. You are better off going with a 2.75"-3.00" downpipe (if you dont already have one). Yes, you will loose some low end power, but the mid-top range gain is well worth it.
Also, like other members have mentioned .... STAY AWAY FROM THE NOODLE HEADER

Its a terrible design for a header .... it will slow the velocity of the exiting exhaust flow from the head causing poor performance. You might actually loose some power from it. I would either go with a good shorty header, or get a header downpipe combo. Just my 2 cents.
