I have this problem happen all the time. I eventually installed a switch to manually turn it on. I did a how to many years ago. The only thing is I have the switch wired to a constant power for when i was staging at the drag strip. Sucks if you forget to turn off the switch. I would recommend tying into some that is only on when the key is on
The fan I don't have wired to a switch now comes on when around 187-190 on low ... Just like it used to. I still left the other one wired to a switch ... I tested the wiring by wiring my headlight halos to see when the halos would come on and they've been working... I'm going to rewire everything back to normal this weekend. Seems like I'm good to go after replacing Tstat, coolant temp sensor , and checked the wiring.
